Super-Easy Instant Pot French Onion Soup Recipe
Anyone who's ever made French Onion Soup from scratch knows it's time consuming. When you're not tearing up from slicing multiple onions, you're spending 45 minutes to mix and caramelize them over heat. And while creating stock isn't too difficult, who has all those ingredients?
Thankfully, there is such a kitchen miracle known as the Instant Pot. What normally takes at least an hour sans pressure cooker, now takes about 35 minutes of cook time. Streamline the arduous task of onion slicing with a handy-dandy vegetable and fruit chopper, and you're enjoying herby, rich, warm soup in no time.

3 yellow onions
2 shallots, optional
2 garlic cloves, optional
6 tbsp butter
1 tsp honey
2 tbsp thyme
2 tbsp flour
2 qt beef stock (veggie or chicken works too!) ⠀⠀⠀⠀
2 bay leaves
1 cup red wine
Salt and pepper
French bread (we only had sandwich bread 😅)⠀⠀⠀⠀
Gruyère cheese (we only had Parmesan)⠀
Slice onions and shallots and mince garlic.
Add onions, shallots, butter, and honey into Instant Pot.
Manually set Instant Pot and cook for 20 minutes.
Release pressure. On Sauté function, add thyme, flour, and garlic. Cook for 5 minutes.
Add wine, broth, bay leaves, salt, and pepper.
Close Instant Pot and manually set for 10 minutes.
Quick release pressure and remove bay leaves.
Salt and pepper as needed.
Ladle into oven-safe bowl.
Add toasted bread with melted cheese into bowl. Or toss a whole handful of cheese on top of soup and broil in oven until cheese is melted.
Top with thyme.
